Pineapple Coconut Pecan Poke Cake-

Hi Friends.

I made this cake for company this week.

It was loved by all and the easiest cake ever!

Sometimes called a 'Do Nothing' or 'Tornado' Cake.



Poke Cake

Preheat oven to 350 degrees

For the Cake:

2 cups Flour

1 tsp. Baking Soda

1 cup Sugar

2 Eggs- beaten

1tsp. Vanilla 

1  20 oz. can Crushed Pineapple in Juice- 

Add Juice also!

Mix ingredients in a large bowl.

Pour into a greased 9'' x 13'' pan.

Bake at 350 degrees for 28- 35 min.

Until golden, check to see if done with toothpick.

Remove from oven.

Just poke away! 

I  used a bamboo skewer to poke holes into the cake

right out of the oven.




Next prepare the topping:

1/2 cup Butter

                                                                 2/3 cup Evaporated Milk

                                                                        1 cup Sugar

1 cup Sweetened  flaked or shredded Coconut

1 cup chopped Pecans

1/2 tsp. Vanilla

Melt butter, 

then add the rest of the topping ingredients.

Stir well.




Pour over cake.

Use a fork or spatula to spread evenly.





Just set on table for now to cool- and refrigerate later

Serve warm or straight from the fridge.



 Serves 12

Can be made one day ahead!

It quickly became a family favorite.

Got an Old Scrub Brush ?



You could use it to clean something, but that's no fun!




I have one I don't use anymore so I decided to give it a makeover.



I gave it a good sanding to get rid of what was let of the 

old finish on the wood.



I used some dark wood stain on the brush.

I love to stencil-

Any wood surface is not safe at my house!

I used these stencils from

Cathe Holden at Inspired Barn

You will see more of my projects over there ;)



I use painters tape to hold down stencil-

a stencil brush is needed

and a little dab of black acrylic paint!


After the paint dried, I used a clear acrylic spray finish to seal.


Flipped over it can hold pictures!
