Recipe for RUMBLEDETHUMPS -Scottish Comfort Food !

 Hello my friends-

No, I'm not Scottish-

but when I came across this recipe I knew I had to

give it a try ! 

It has ingredients that are delicious and things

I usually have on hand.

I believe it is pronounced- Rumble-de-thump. 



Let's run it through step-by-step and I'll share

the recipe again at the end.


You will need a small to medium green cabbage-



Shred the cabbage and thinly slice a whole onion,

set aside for now.






You'll need 2 lbs. of potatoes , peeled and cut into small pieces.

I used 4 russet potatoes.



Cover the potatoes 

with water in sauce pan.

Bring to a boil, simmer until tender when

poked with a fork.

Cooking time will depend on size of cubes.






While the potatoes cook,

Sauté the cabbage and onions with 2 Tbsp, butter.

Until  soft but still crunchy-

turn off the heat and set aside.




Drain the potatoes.

Mash a bit with 2 TBSP. butter and 1/2 cup milk or cream.

Leave chunks of potato for texture.


Add  the cabbage to the potatoes.

You may need a bigger bowl.




Butter the inside of a deep casserole dish.




Put 1/2 of your mixture into the baking dish.

Add 1 cup shredded Cheddar cheese.

Cover with the rest of the mixture and 

1 more cup of cheese on top.





Bake 350 degrees for 25-30 min.




Until cheese is golden brown.








Serve hot as a vegetarian meal or as a side dish.

Unbelievably delicious!!!!




Rumbledethumps

1 head of cabbage

2 lbs. of potatoes

1whole onion

2 cups shredded cheddar cheese

4 Tbsp. butter

1/2 cup milk or cream

salt / pepper


Bake 350 degrees for 25-30 min.

      The name is a bit of a tongue twister for me! Next time....and oh yes there will be a next time, I want to put it into muffin cups to serve for brunch. It's so good! I'm glad your family loves it too!
